Comfort Foods - Meat Loaf
There are several key ingredients to making meat loaf, a favorite among comfort foods. Although ground beef is the popular choice for meat, there are other types of meat that could be used. Some use ground beef and ground pork in a 50:50 mixture. Others use these two types of ground meat in different proportions. Most people would say that there is not any major adjustments to the amount of other ingredients when these two types of ground meat are used.
In New York, one family recipe calls for an equal proportion of ground beef, ground pork, and ground veal. The other ingredients remain relatively the same. In the Greenwood family recipe for meat loaf, ground lamb is also used in combination with ground beef. There are some combinations that work better than others, so experiment a bit. When ground lamb is used as an ingredient, spices and herbs are increased by 25% to 50% to enrich the flavor. Some add about 25% more volume of liquid.
Meat loaf is indeed a comfort food for many. Some have used other types of ground meat, such as chicken, turkey, and venison. The type of ground meat that is used as an ingredient is up to the preferred taste of the diners. In most recipes, ground beef is the primary meat ingredient, and the other types of ground meat are included to supplement and enhance the flavor of the meat loaf. No matter what ground meat is used, people relate memories to a comfort food.
