Governor Brown signed senate Bill 303, the revised California Food Handler Law on September 6, 2011. The bill, which amended Senate Bill 602, mandates that food handler training programs be accredited by the American National Standards Institute(ANSI). The bill, which has been more than nine months in the making, mandates training for all food handlers in retail food facilities and represents a forward step in food safety and consumer protection.

With the passing of SB 303, until Jan 1, 2012, food handlers can receive training from an ASTM e2659 accredited training provider or a food protection manager certification organization. After Jan 1, 2012, only ASTM e2659 accredited organizations can provide food handler training.

Hunger at Home: Families Can Watch for Signs of Senior Hunger

A grassroots effort is spreading across the nation to raise awareness for the signs of senior hunger and malnutrition and to collect food for seniors in need. Local Comfort Keepers offices, a leading provider of in-home care to seniors, are working in their communities to help slow the trend that is predicted to afflict more than 11 percent of America?s senior population by 2025. In fact, 1 in 9 seniors is currently at risk for hunger ? a staggering 5 million older Americans.

Watch for physical problems. Look for bruising, dental difficulties, or sudden or sustained weight gain or weight loss.

Ask seniors about their eating habits. How have their tastes or preferences changed?

Check with a pharmacist. They can warn you of the potential for drug-food interactions.

The word “dessert” comes from the old French word “desservir” which means to clear the table. Sometimes referred to as “afters” desserts are usually a sweet ending to a meal.

Included below are two popular dessert recipes. Give them a try and have a sweet ending to your meal.

Queensland Lamington

Originally devised as a method to use stale cake, Lamingtons are squares of butter or sponge cake dipped in melted chocolate, then rolled in coconut. This dessert recipe calls for store bought cake or cake that is already on hand.

Ingredients:

- One butter or sponge cake cut into evenly sized pieces
- 500 grams icing or confectionery sugar
- 2/3 cup of cocoa
- 15 grams butter
- 1/2 cup milk
- 2 1/2 cups desiccated coconut

Icing Directions:

1. Into a medium bowl, sift the sugar and cocoa.
2. Melt butter in small pan.
3. Stir butter and milk into sugar and cocoa mixture.
4. Bring medium sized pan of water to boil on top of stovetop; reduce heat.
5. Place bowl on top of water, stir until chocolate is smooth and glossy.

To make Lamingtons:

1. Place squares of cake onto tines of a fork.
2. Dip each cake into icing mixture, holding over bowl so excess icing can drip off.
3. Toss chocolate covered cake squares into coconut.
4. Place on tray to set.

Pavlova

It is said in 1935, Herbert Sachse, chef at the Hotel Esplanade in Perth, created this popular dessert to honour the visit of Russian ballerina, Anna Pavlova.

Meringues can be tricky, so it is important to start with clean, dry utensils. If the meringue cracks, fill in cracks with extra whipping cream.

Ingredients:

- 6 egg whites brought to room temperature
- pinch of salt
- 1 cup castor sugar
- 1 teaspoon white vinegar
- 1/2 teaspoon vanilla extract
- 2 teaspoons cornstarch/corn flour
- 1/2 cup of whipping cream
- 1 cup sliced fresh fruit such as strawberries, kiwi fruit, and blueberries

Directions:

1. Preheat oven to 400 degrees Fahrenheit (200 C).
2. Lightly grease an oven tray, then line with baking paper.
3. Using a metal medium sized bowl, beat egg whites and salt together on medium speed until soft peaks form.
4. With mixer still running, sprinkle castor sugar, one spoonful at a time, beating well to mix into egg whites. Continue until all sugar has been used and peaks are stiff and glossy.
5. Remove from mixer and add vinegar, vanilla, and cornstarch, using a spatula to gently fold into mixture.
6. Pile mixture into centre of baking sheet, forming a circle with a hollow centre.
7. Turn oven down to 250 degrees F (130 C) and bake without disturbing for 1 1/2 hours.
8. Slice fruit and sprinkle with lemon juice to prevent browning.
9. Whip cream gently until soft peaks form.
10. Turn oven off and crack door, leave Pavlova in until cool.
11. Remove from oven and gently transfer Pavlova to serving plate. Fill hollow centre with fruit and top with whipped cream.
12. Immediately serve.

A while back someone asked me about dogs’ ears having a foul odor. Well, for the last ten years and still continuing. Our family cocker spaniel, Brandy, has also had his ears medicated off and on for chromic ear infections. Many people stand by the fact that home cooked meals for their dogs has helped very much to lessen or remove ear infections.

 

Yes, he has had his ears cleaned and deep cleaned by the vet and all of the above have relieved the symptoms, but none have cured his ear infections.

It has been discovered dogs are dying from this mulch. The poster indicated that death can occur within a few hours or about eighteen hours after ingestion.

Hungry for some good home cooking, why not try Bob Evans in Clarksville Indiana. We have eaten at Bob Evans, once a week for about a month. The word that comes to mind is a very pleasant surprise. We are always greeted at the door, by a very proficient hostess at Bob Evans. The waitress always comes in a timely manor with menus and drink orders. Since we are regulars, we know the menu pretty good, they do have specials, so if you go regular, there will be something new to try.

The menu choices are huge; I’ve highlighted some of their specials below.

We were there for dinner around 5:30 we know the menu from our numerous visits to this location in Clarksville, Indiana, on our last visit we ordered our favorites of.
(2) Piece southern fried chicken breast dinner, (2) sides your choice. I chose the dressing and carrots. The other members ordered the country fried steak with choice of gravy and (2) vegetables. The turkey and dressing is very good to. The total for 3 dinners including drinks came to .76

We consider this to be the best bargain around, a restaurant with good home cooking. A basket of bread (your choice), we love the banana bread. The waitress kept the glasses filled and the bread basket full. The waitress even gave us a few extra pieces of bread to take home. The waitress also offered to give us refills on our drinks to take with us. Not only was the food good at Bob Evans, the waitress friendly, and the restaurant clean.

Easy Pizza Recipe with a Twist

The exact history of pizza has been debated. This is largely because pizza has evolved over many years and been prepared in various ways, although similar. Before pizzerias became a common thing, you could often see street vendors selling slices of pizza on the street. In today’s modern world, you can get pizza delivered to your home easily and find pizza restaurants on most any street.

Pizza is certainly a favorite food, whether you enjoy it with just hot and bubbly cheese or the works. My Easy Pizza Recipe with a Twist isn’t a traditional pizza because I use tortillas as the crust. It’s very easy to make and tastes quite good. It’s also great for the kids to make as it doesn’t take much preparation. They can have fun coming up with various pizza topping combinations. Whether you want pizza for lunch or dinner or just a snack while watching a great movie, you can prepare this in very little time and be satisfied with the results.

Easy Pizza Ingredients

wheat or flour tortilla (1 per person)
pizza sauce of your choice
shredded cheese (I use a casserole blend, but mozzarella is good)
for extra flavor you can add a bit of thyme and/or Italian seasoning

Add any combination of pizza toppings:

mushrooms, onions, olives, banana peppers, sausage, hamburger, pepperoni, bacon, pineapple, ham, etc.

Easy Pizza Directions

Spray aluminum foil or baking sheet with Pam. Place tortilla on pan. Spread pizza sauce on tortilla. Add a thin layer of cheese and then toppings of your choice. Add another layer of cheese. Bake at 400 degrees until tortilla is crisp and cheese is bubbly.

Cut pizza crossways and crossways again to get four slices from one tortilla for easier serving. You can serve the pizza alone or with a delciious salad.

Note: You can also experiment with using flatbread for the crust.

Sushi can be put in the fridge and then serve later. You can try this recipe for finger bites food for a party or holiday occasion. Sushi is well like by everyone. You can use a shaper or you can roll it on your own. You can serve it with sauce.
